Ennai Kathirikai

One of the best tasting recipe with the egg plants. Bunny wanted to have ennai kathirikai this week.So we bought nice round small sized brinjals from the Indian street. This is my first try. I never made ennai kathirikai before. Surprisingly it turned out very well. With Bunny's applause, I felt really proud to have prepared it..

Recipe as follows...

Coriander seeds - 2 tsp
Bengal gram - 1.5 tsp
Black gram - 1.5 tsp
coconut - 2 tsp
asafoetida - little amt
salt - 1.5 tsp
Red chilli - 6

Fry all the above ingredients and powder them.

Slit the brinjals into 4, still intact near the stalk.

Stuff the powder into the brinjals.

Steam cook in pressure cooker for 5 mins. ( Brinjals directly fried will consume more oil. Steam cooking improves taste and makes it more healthy to eat. )

Add oil to pan. Splutter mustard seeds and orid dhal. Add the brinjals and fry till its completely cooked.

Tasty 'Ennai Kathirikai' ready..
